Cajun Chicken Flatbread Sliders with Salad and Topped with Lime Infused Sour Cream

Cajun Chicken
2x tbsp Olive Oil
1 kg Chicken Thigh Fillets
3x Tablespoons Cajun Seasoning
500ml Chicken Stock
1x Packet Sonora Foods Flatbread SlidersToppings:
¼ Purple Cabbage (thinly sliced)
2x Limes (cut into wedges)
1x Avocado (sliced into cubes)
120g Packet baby spinach
1x Tomato (sliced into cubes)
200g Sour Cream -
1. Heat olive oil in a medium non-stick pan over medium heat. Add the chicken, and sprinkle with 3 tablespoons of Cajun seasoning. Turn chicken over (10 minutes on each side) until cooked through.
2. Add the chicken stock and season with salt and pepper to your liking. Simmer until the chicken is tender and falls apart easily, and the liquid has thickened.
3. Prepare all you fresh produce on a board, including the sour cream, cubed tomatoes, cubed avocado, baby spinach, thinly sliced purple cabbage and serve as is for everyone to share. Follow your preferred Sonora Slider heat instruction.
4. When you are ready to serve, spoon the hot chicken filling into the sliders and enjoy!
