Slow Cooked Pork Flatbread Sliders with Salad and topped with Sour Cream Avocado Dressing

Slow Cooked Pork
1 kg Pork Roast
2x Brown Onions (cut into wedges)
1x tbsp Rosemary (dried)
2x tbsp Cumin
1/4 Cup Tomato Sauce
1/4 Cup Mustard
250 ml Vegetable Stock
1x tbsp Kosher Salt
1x tbsp Cracked Pepper
2x Oranges (juice only)
2x Limes
1x Packet Sonora Foods Flatbread SlidersToppings:
2x Tomatoes
1x Avocado
1/2 tsp Kosher Salt
1x Bunch or Coriander or Parsley
1x Bunch Spring Onion
300ml Sour Cream -
1. Add the onions, pork, tomato sauce, mustard, orange juice to your slow cooker and mix through by turning the pork. Then add the the vegetable stock, orange juice, rosemary, cumin, kosher salt, cracked pepper and mix together. Slow cook for 8 hours on low with a little mix and turn of the pork half way. Discard the pork fat at the end.
2. Once cooked, transfer it all to a deep sided frying pan on a low to medium heat and simmer until to juices have reduced and the meat has fallen apart in your tongues.
3. Using a blender, make the dressing by adding 1x avocado, 1x lime (juice only), the sour cream and 1/2 a tsp of kosher salt. Blend until all the avocado has mixed through and the dressing has a beautiful green colour.
4. On a large wooden serving board, prepare your fillings, starting by dicing up your tomatoes, avocado, spring onion, coriander or parley and placing each ingredient into an appropriate size bowl. Just before you serve heat the flatbread sliders by following the instructions on the back of the packet and serve immediately.

If using a fan force oven, cook at 120° (celsius) for 8 hours.
